🥞 Fluffy Pancakes

If you’re looking for fluffy pancakes to hit the spot, look no further!

As part of our mission to promote a cruelty-free, vegan lifestyle through education, we want to share this delectable pancake recipe, free of meat, dairy, and egg products.

Dry ingredients:

2 ½ cups unbleached all purpose flour

2 Tbsp baking powder

2 Tbsp vegan sugar*

½ tsp salt

Wet ingredients:

2 cups non-dairy milk (soy, almond, oat, etc)

½ cup water

1 Tbsp canola oil

1 tsp vanilla extract

In a large bowl, sift together the dry ingredients.

  • In a medium bowl, mix together the wet ingredients.

  • Pour the wet ingredients into the dry ingredients, and gently whisk until large lumps are broken down.

  • Do not over mix the batter. Allow batter to sit and rise for a few minutes while you heat your pan.

  • Heat a pan or skillet over medium heat. Add a small amount of canola oil to the pan.

  • Gently stir down your batter, then scoop out a small amount of batter to form a pancake.

  • Using a ½ cup size dry measuring cup to scoop your batter will help you keep the pancakes a nice, uniform size.

  • Use a ¼ cup scoop for smaller “silver dollar” sized pancakes. Cook until golden on each side, and serve with real maple syrup and your favorite toppings.

Makes about 10 medium sized pancakes.

*What makes sugar not vegan?

Most cane sugars in the U.S. are refined with bone char (charred animal bones) in the filtering process. Even though the final product may not contain animal parts, the refining process makes it not suitable for vegan/vegetarian consumption.

Suitable alternatives:

Any organic sugar is vegan (even cane sugars, as long as they’re organic).

Beet sugar

Raw/unrefined sugar
