Purple Sweet Potato Pie

Simple, minimal ingredients. It's been said this gorgeous pie is almost too pretty to eat, but rest assured, you'll want to dig into this show-stopper. You can make this as healthy as you want, depending on the type of sweetener and pie crust you use.
This is an easy pie recipe that comes together quickly, so for holidays or simply your busy life, make this your go-to.

Ingredients:
16oz baked/peeled purple sweet potato
¾ cup silken tofu
⅔ cup organic sugar or any desired sweetener
1 ½ teaspoon ground cinnamon
1 9-inch vegan pie crust
Directions:
Preheat oven 350 degrees. Into a food processor, blender, or hand mixer, blend potato, silken tofu, sugar, and cinnamon. Process until smooth.
Pour potato mixture into the pie crust. Bake 45 minutes to one hour, or until set and crust is golden. Let pie cool to room temperature.

Top with homemade whipped coconut cream or Cocowhip.
Serves 6 to 8.
